After a long run of success with The Bull, the Sorrentino family is making splash in the Lawrence restaurant scene after taking over, renovating, and reopening Dempsey's Burger Pub at 623 Vermont.
The Sorrentino family recently came across an opportunity they could not refuse when the previous owner of Dempsey's Gourmet Burger Pub was looking for a qualified successor to take over the Lawrence restaurant. The Sorrentino's have had a long run of success in owning and operating Bullwinkles Bar under the management of brothers Tom and Pete. Pete's ability to manage the day-to-day operations and Tom's expertise on the financial side make the brothers a highly capable management team. Their unique combination of skills and experiences made it an easy decision to accept the new opportunity. The brothers, along with parents Joe and Jane, hope to expand their presence in Lawrence and reestablish the pub with their own personal touch. In Pete's words, "We really liked the atmosphere Dempsey's had created, so we decided to build on it and make it our own."
Although this is their first time in the business of serving food, they are experts when it comes to creating a fun atmosphere for all to enjoy. They have maintained a close relationship with the previous owner who has been helpful in the transition process as the family learns the ins and outs of the restaurant business. To ensure they offer high quality food and dining, Pete has consulted with other restaurants and chefs in the area, including the head chef of Jasper's restaurant in Kansas City. Speaking to other owners and experienced chefs has not only provided valuable food advice, but also on how to provide the best experience for each customer.

After completing significant renovations and reopening the doors in January 2019, the restaurant has found success and drawn praise. The gourmet burgers and hand-cut fries continue to remain the signature item of the menu. Their made from scratch entrees, reasonable prices, and fun atmosphere continue to attract both college kids and locals alike.
The family's work ethic, customer focus, and willingness to go above and beyond expectations lead me to believe that the family will be long-time staples in the Lawrence business community.
